About The Chashaku of Suikaen:
The traditional utensil used to scoop matcha in the chanoyu practice is the chashaku, also known as a tea scoop for matcha. This lovely piece is made of white bamboo.
The "white" bamboo used for the scoop is henon bamboo (hachiku), which has had its color removed using centuries-old techniques. After 2-3 years of growth, a specific type of bamboo grown in Japan's Kinki region (Nara, Kyoto, Osaka, Wakayama, etc.) is harvested in the winter, boiled to remove oil in the plant, dried in the cold winter air, and aged for another 2-3 years. The green color of the bamboo fades into the "white" color of bamboo during this process.
